**i did not bake these cookies my brother did the baking due to my arthritis I can no longer participate, saying that I still enjoy watching/ searching for recipes **
I really wanted to get some baked cookies because they make the house smell great and it’s always nice to have baked goods for visitors or just to take to football in the car!
So I found a recipe “Phil vickers cookies” the recipe it’s self included raspberry’s but I didn’t want fruit so made just white chocolate cookies!
Ingredients
- 225g (8oz) unsalted butter, softened
- 225g (8oz) caster sugar (I used granulated sugar and it was fine)
- 170g tube Carnation Condensed Milk
- 350g (12oz) self-raising flour
- 150g (5½oz) white chocolate, chopped
Method
- Pre heat your oven to 180c 350f or gas mark 4
- We next weighed out all our ingredients
- Cream together your sugar and butter
- Add your condensed milk (we did it a bit at a time)
- Chop your chocolate and then add to the mixture
- Using 2 spoons form small lumps of mixture and pop them onto the baking tray
- Bake for 15-18 minutes until golden around the sides but still a little soft in the centre
- Remove from the oven and allow to cook
We made 32 cookies out of this recipe in total
The cookies were amazing both warm and cold .. well my brother and dad tell me!
On a personal note I do miss cooking but I’m happy enough researching and watching and who knows one day I might get to bake absinthe
